looking for a good pedal that is good for beginners that is easy to use but that are good enough to not need a different pedal in a year.

Shimano make a pretty solid pedal, so this isn't a bad start. What kind of riding do you do (Xc, all mountain, freeride, downhill)? This pedal gives you a good platform for clipping and unclipping, but would be a little heavy for XC and might be extra bulk for some agressive riders.
The adjustable release tension will be a good thing while you're learning.
