how can I adjust these bindings to fit a slightly larger boot from their current setting?

If you take them into your local shop they will be able to adjust them, depending on the amount of adjustment this will cost between 10 and 25 dollars.
We cannot advise you on a do it yourself because it requires a certified technician.
