Could this pack handle a week long single person trip fitting all necessitys. (Food, Tent, Sleeping Bag, Clothing)

It will more than accommodate one weeks worth of gear. Just be careful not to over pack, because it is so big.

No that's not a Mountaineering grade bag. Honestly that bag is simply huge. For a week long backpacking trip I'd highly recommend:
Both are excellent quality, mid 4k cubic inches bags with superior suspension systems (aka comfort / ease of carrying a heavy load).
If you feel that you need to carry over 4k cu in your total weight will probably exceed 40 lbs which will really make your trip miserable. I'd focus on cutting weight. With modern equipment (especially warm weather sleeping bags and tents) you should easily be able to carry the equipment in a 4k cu in pack. Worse case scenario you'd need to strap the tent to the bottom of the backpack.
Also there is some true beauty in travelling as minimal (and ultralite) as possible when in the backcountry. You can travel just with a shelter like: 1 person shelters
as opposed to a tent etc. and save tons of weight / space.
